INGREDIENTS:
– 1 bulb of fennel
– 1 small red onion
– 1 blood orange
– 1 navel orange
– 1 mandarin orange
– fennel shavings
-olive oil
-champagne vinegar
-sea salt
Using a mandolin, slice the fennel and red onion in paper thin slices. Using a knife, slice all citrus in thin pieces as well. Add all components to bowl. Drizzle with olive oil, champagne vinegar and sea salt. Toss. Top finished salad with fennel shavings and black pepper if desired.
